In my opinion You should add one more possibility (this week) in urgency combobox.

Actually I recommend that these times should be editable as a whole – To be set via a table perhaps?

Yes, I think "this week" is good idea, or even "Today". I would use it to set this urgency in the morning to the tasks for the day. "Yesterday" is cute, but I dislike setting "crisis" attitude for myself or for the team. I hope it is easier to make short term than configurable table which I would recommend as well.
